Samgyetang (£15-£20) is the most popular dish in summer – a whole chicken stuffed with fresh ingredients including ginseng; it is renowned for being one of the healthiest dishes in Korea.
To add additional flavour have it with insam-ju (ginseng liquor £7). The young, spring chicken — stuffed with chestnuts, garlic, dried jujubes, and most importantly, ginseng — is slow-cooked for hours on end. The food is meant to re-energize a flagging spirit, and traditionally, is meant to be eaten on one of the three dog days of summer, the sambok.
Tosokchon is in Bukchon Hanok Village, where traditional hanok houses have been preserved and protected.
